What kg/h on a catalogue really means
The figure is measured on trimmed, boneless, chilled meat, fed continuously by hand, through a single plate — usually 6 or 8 mm. Three things pull the real number down: the operator pauses to cut and load, the plate clogs and has to be cleaned, and the meat is colder or tougher than the test batch. Plan on 50–70% of the rated figure as your sustained output.
| Rated in the catalogue | Sustained output you can plan on | In one hour |
|---|---|---|
| 150 kg/h | ≈ 75–105 kg/h | one operator, tabletop machine |
| 300 kg/h | ≈ 150–210 kg/h | still one operator, but you stop cleaning the plate mid-batch |
| 650 kg/h | ≈ 330–450 kg/h | floor machine, two people feeding |
| 950 kg/h | ≈ 500–650 kg/h | production line territory |
The arithmetic, in one line
Daily kilos ÷ minutes you want to spend grinding ÷ 0.6 = rated kg/h you should buy. If you process 400 kg a day and want it done in 90 minutes: 400 ÷ 1.5 h ÷ 0.6 ≈ 445 kg/h rated — a floor machine, not a tabletop.
Which class fits which operation
| Your operation | Daily volume | Rated class to look at | Our families |
|---|---|---|---|
| Neighbourhood butchery, one shop | 80–200 kg | 150–300 kg/h | TM, TW, AL, TF |
| Butchery with a deli counter / sausages | 200–500 kg | 300–650 kg/h | TK-32 and up |
| Restaurant group or hotel kitchen | 100–300 kg, batch work | 150–320 kg/h | TK-8 / TK-12, TF |
| Central kitchen or small factory | 500–2000 kg | 650–950 kg/h and above | TK-42, TK-52, plus a bowl cutter |
| Halal slaughterhouse offal line | continuous | two machines, alternating | talk to us before you choose |
Four decisions that change the price more than capacity
- Single or double phase: 380 V three-phase motors are cheaper to build at 1.5 kW and above. If your shop only has 220 V, say so before we quote — a 5.5 kW three-phase grinder is not going to run off a converter.
- Contact parts: stainless head and auger against a cast-iron head. Salt and repeated washing decide this, not budget.
- Plate and knife set: buy two sets. A clogged plate stopped mid-batch costs more meat than the spare set.
- Frozen blocks: if you grind semi-frozen meat, you need a heavier bearing and a lower speed. That is a different machine, and we will not sell you the wrong one.
Grinder, cutter or saw — they are not interchangeable
A grinder produces grain. A bowl cutter produces emulsion (sausage paste, burger mince with binding). A band saw cuts bone and frozen blocks. Most butcheries need a grinder plus a saw; a sausage operation needs all three. Our JG saws and the meat bowl cutters are listed separately for that reason.
